You can add tags from your Conversations, Contacts, or within Journeys. Once a tag is created, it cannot be directly removed at those places. To manage your existing tags, you need to navigate to settings/tags. Here you can add and delete all your tags in one central place

⚠Deleting a tags, removes it from all your contacts. If you add the same tag again, it will not be associated to the original contacts anymore!
